That's the way most good places do it. I think some people in the pizza business for over 30 years (and some publications like Zagats) might know a little better than you.


I know more about pizza and wop food than any pretentious asswipe over at Zagot who probably calls sauce gravy.


And I eat at places and share the same opinions of pizza makers who 30 years ago had 30 years experience.

You're right about Zagots. They just follow the crowds and the actual taste is an afterthought.

But I still think the pizza you're enjoying is made with a mixture of whole and low moisture part skim.

Like I said, I get defensive over pizza.
