I've found little concrete as to providers, but I'm set to hook up for a couple of days with a girl I met on my last vacation. From what I've been able to find on the web you want to avoid the agencies. The web pages I've seen smell like pure rip-off.
The reviews of night life and night clubs provides some interesting hints - a review of a new night club with strict entrance requirements (they call it "face control" - think of trying to get into Studio 54 during it's heyday) reported that it was unusual in that the new club had no "professional" ladies in attendance. Of course, the reviewer seemed to deem the presence of "professionals" a bad thing.
A hotel review posted on Yahoo noted that the hotel bar was populated by "fantastic escorts".
